8 slices Wimmer’s New England Sausage
1 tablespoon butter or margarine
4 English muffins, split and toasted
8 eggs, poached
Hollandaise Sausage
Butter toasted muffin halves and tops each with a slice of sausage and a poached egg. Top each with Hollandaise sauce. Serve 2 muffin halves to a person. Garnish with parsley. Makes 4 servings.
Hollandaise Sauce
2 egg yolks
1 tablespoon lemon juice
½ teaspoon salt
½ cup very cold butter
Add egg yolks, lemon juice and salt to a small saucepan. Add butter slowly and stir mixture while cooking over low heat. Continue to stir until butter is melted and sauce has thickened. Do not get sauce too hot. Makes 1 cup.
